Sometimes, late at night, I get the urge to get my grub on, but 'ordinary' foods just don't cut it. I feel the need to... experiment. Sometimes these experiments are wonderful, sometimes they're disgusting. Since tonight's experiment went surprisingly well, I figured I'd share.

Spicy Waffle-Battered Pork Chops
Ingredients:
  • Boneless Pork Chops, thawed (or bone-in, but you might want to remove the bone yourself.)
  • Belgian Waffle Mix
  • 1 egg
  • 2 cups water
  • Your favorite meat spices (I recommend oregano & chicago steak spice mix)

You'll need a flat-bottomed bowl that can hold about 3 cups of liquid and still accomodate your pork chop for this. In this bow mix the belgian waffle mix, egg, and water according to the package directions until smooth, then add the additional water to thin it down. Make sure there are no lumps. Mix in your spices as well.

Spray down your skillet with some cooking spray, and then lightly dip your pork chops into the batter, making sure both sides get a nice even coating. Fry the chops until the outside of the batter begins to blacken, then flip them and do the same to the other side. You can check for doneness by cutting open the meat; make sure it's not pink inside. If you want to be absolutely sure, toss the fried pork chops into the microwave for about 60 seconds.

Leftover batter can be refrigerated, but should be used within a week. Serve with whatever side-dishes you feel is appropriate.

Here is a side dish for you...

Gargonzola Potatoes

Cut up a bunch of baby red potatoes into quarters and toss them into a bake pan.
Sprinkle with garlic salt and thyme.
30 minutes at 375 degrees F.
Top potatoes with crumbled gargonzola cheese and bake for 3 more minutes.
Enjoy!
