I struggle with most fantasy books, though I seem to have read a lot of them. Tad Williams and Stephen Donaldson probably top my list in the genre.
The (series that started with dragonbone chair) was great, Tad has a real poetic style which is easy to be drawn into. I also liked his books set in the near future which were essentially a thriller set in a mix of Virtual internet and real world.
For me the best book by a longshot by Donaldson is the Illearth War, the second in his first trilogy. In particular the tales from the two Bloodguard who return from their mission at different parts of the novel. That story still haunts me over 20 years later :) Sometimes I pickup the book and find those 2 chapters. The rest of the book is great too. Anyway the series is tough reading for a lot of people but I really liked his first 3 books, and the gap series (which is sci fi setting) was great.
Besides Donaldson, as a youth for me it was the Belgariad by Eddings and Magician (Feist) which got me interested in the fantasy genre.
As for the wheel of time, I used to joke with a friend that Robert Jordan would pass away before he finished the series.. and of course one day that friend called me with the news :-/
